Weekend moments

Today afternoon was spent enjoying good food in the company of my daughter and a good friend of the family. We went to eat Clams. Here we called "Clams to Bulhão Pato",  the clams cooked this way are very good, and the recipe it is very easy to make. It was a very pleasant afternoon. I leave you the recipe. Ingredients : 1 kg of clams Olive oil to fry the clams 2 garlic cloves 1 bunch of coriander 3 soup spoons of white wine Salt /to taste Pepper /to taste Preparation : 1 . Wash the clams thoroughly. Bring the oil to the fire and fry the garlic cloves. 2 . Then add the chopped coriander, the clams and season with salt and pepper. 3 . Shake the pan until the clams are all open and then drizzle with the wine. Let the wine evaporate a little and serve immediately. Add the final touch with a little of lemon juice over the clams.

Blackberry and Meyer Lemon Gin and Tonics

The good thing about gin and tonics and that the base of the drink is already there: gin, and tonic. You can add pretty much anything you want to this drink and it will be yummy. I add raspberries a lot, sometimes blueberries or basil, and sometimes-just mint. Whatever I have extra of really. This however has been by far my favorite flavor collaboration. I hope you all enjoy it as much as I did! Blackberry and Meyer Lemon Gin and Tonics Serves 4 Ingredients: 12 blackberries 20 fresh mint leaves 2 Meyer lemons (can sub. regular lemons) 1/4 cup simple syrup 12 ounces good quality gin tonic water ice Directions: 1. Set out four high ball glasses. 2. Place 3 blackberries, 5 mint leaves, juice of ½ lemon, and 1 tablespoon simple syrup in each glass and muddle together. 3. Fill each glass with ice, followed by 3 ounces of gin. Top off each drink with tonic water, stir and serve. Enjoy it! Recipe and photo: spoon fork bacon

Two Ingredient Chocolate Mousse

Two Ingredient Chocolate Mousse Serves 4 Ingredients 9.35 ounces bittersweet chocolate (at least 70% cocoa), coarsely chopped 1 cup water 4 tbsp sugar, optional* *Without the sugar, this mousse is VERY intensely chocolately.  We personally love it (divine with a dollop of whipped cream), but if you generally prefer a milder chocolate taste, add the sugar. Place a mixing bowl on top of another slightly larger bowl filled with ice and cold water.  The bottom of the top bowl should touch the ice.  Set aside. Put chocolate and water (and sugar if using) in a medium pan over medium heat.  Melt chocolate, stirring occasionally. Once melted, pour the chocolate into the bowl sitting on top of the ice and begin whisking.  Whisk constantly until mousse begins to thicken, 2-3 minutes.  Be careful not to over whisk as the chocolate can become grainy.  (If this happens, just re-melt the chocolate over medium heat and pour back into the mixing bowl...

Breakfast Popsicles

This divine recipe from Caramel Potatoes blog , It's healthy, practice and ideal for a summer breakfast. Ingredients Yogurt (used non-fat vanilla) Fruit, thin sliced (used kiwi, strawberries and blueberries) Directions Add a little yogurt to mold,  slide fruit slices down the sides if you want them to show and look pretty.  Add more yogurt and them more fruit until mold is full. Note:You can also chop your fruit small and combine it with the yogurt- then pour into molds and freeze.  (Work better with the small, narrow molds.) Unmold and serve with granola if desired. Spinach and Mushroom Egg White Frittata

Ingredients 2-3 brown mushrooms, sliced handful of fresh spinach 1 cup egg whites kosher salt 2 tablespoons grated parmesan cheese hot sauce if desired Instructions Preheat the oven or toaster oven to broil. Spray a 7-inch non-stick fry pan with cooking spray and heat on medium heat. Add the sliced mushrooms and cook for 2-3 minutes, turning once or twice. Add the fresh spinach and cook for 1-2 minutes or until the spinach has wilted. Whisk the egg whites in a bowl until light and frothy, add a pinch of kosher salt and pour into the mushroom and spinach mixture. Sprinkle with 1 tablespoon of the parmesan. Let the eggs cook undisturbed until the edges of the egg whites start to cook through and turn a more solid white. Gently lift the edges of the egg whites and tilt the pan so the uncooked egg runs under the cooked part and cook for another minute. Transfer the fry pan to the oven and broil for 2-3 minutes or until the eggs have puffed and have cooked through....

Line 2 baking trays with baking parchment. Melt the butter, sugar and syrup in a small saucepan. Mix in the vanilla, remove from the heat and leave to cool for 10 mins. Sieve the flour and bicarb into a bowl. Pour in the butter mixture, add the egg and stir together to form a stiff-ish dough. Pop the dough in the fridge for 10 mins to chill and firm up. Heat 2/5 cup sugar in a frying pan over high heat. Cook until lightly brown in color. Add in raisins and water. Toss to evenly coat. Set aside. In a bowl, combine the eggs and 1/4 cup sugar. Whisk until light and fluffy. Add in the vanilla oil, cinnamon and brandy. Sift in the cake flour, almond flour and baking powder and fold in. Mix in the melted butter. Pour mixture on top of the apple mixture. Cover and cook over medium heat for 3 minutes. Decrease heat to low and continue cooking for another 30-35 minutes....

SOBREMESA:Gelado de Banana com Molho de Groselhas

Ingredientes: • 2 bananas pequenas • 1 limão • 250g de iogurte • 1 embalagem de nata • açúcar • 3 colheres (sopa) de licor de banana • 400g de groselhas • 2 colheres (sopa) de rum Preparação: Descasque as bananas e corte-as às rodelas. Deite no copo da varinha mágica, junte o sumo do limão e reduza a puré. Bata, à parte, o iogurte com a nata, 60g de açúcar e o licor de banana. Misture muito bem os dois compostos, deite numa sorveteira e siga as instruções do aparelho. Pode deitar numa taça de plástico e guardá-la no congelador. No caso da segunda proposta, bata o preparado de hora a hora com varas elétricas para quebrar os cristais de gelo. Reserve algumas groselhas para o final e triture as restantes com 25g de açúcar e o rum. Sirva o gelado moldado e decorado com o molho e as groselhas que reservou. (originario daqui )

Ingredientes para o bolo: 4 ovos 2 chávenas de chá de açúcar 2 chávenas de chá de farinha 1 chávena de chá de óleo 1 chávena de chá de leite 1 chávena de chá de chocolate em pó 1 colher de sobremesa de fermento em pó Pré-aqueça o forno a 180º. Enquanto isso, bata os ovos com o açúcar até formar um creme homogéneo. Adicione os restantes ingredientes, mexendo bem, e leve a assar em forma untada por 45 minutos (ou até o palito sair seco). Ingredientes para a cobertura (opcional, mas altamente recomendada): 1 tablete de chocolate de cozinha 100 ml de natas 1 colher de sopa de manteiga 1 colher de sopa de açúcar Num tachinho com o lume no mínimo, para não deixar ferver, derreta o chocolate com a manteiga (não é necessário banho-maria). Christmas Tree Meringue Cookies Ingredients 4 egg whites at room temp 1 Cup granulated sugar pinch cream of tartar ⅛ tsp almond extract green gel food coloring multi color sprinkles star sprinkles frosting of your choice Instructions Heat oven to 200 degrees. Place egg whites, sugar, and cream of tartar in a bowl of your stand mixer. Place bowl over boiling water on the stove. Whisk vigorously until sugar dissolved and there are no more sugar granules visible. Remove from heat and whisk in extract.
